Summer Recipe

typical South Tyrolean spring vegetable: asparagus

  • Summer Recipe: Pasta with asparagus and speck

Asparagus is a . It grows in April and May around Terlan, in the south of South Tyrol, and in Kastelbell in the Vinschgau: it is among Europe's finest varieties of asparagus. Served with speck, it develops an unusually good aroma - and you don't need to be a professional chef to prepare it.

Preparation:

First boil plenty of water in a saucepan for the spaghetti. While the water is heating, gently fry a garlic clove with some olive oil in a pan. As soon as the garlic begins to brown, add the diced speck, allow it to brown a little then add some white wine.

Take the washed and finely chopped asparagus and simmer it with the garlic, speck and wine. Once the pasta is "al dente", drain and place in the pan with the speck and asparagus, add half a ladle of the water used to cook the spaghetti and serve with a Sauvignon or Borgogna Bianco wine.

Good luck and buon appetito!
